We serve the pollen uncracked. Craking marginally improves the absorption of the carbs and proteins.
But this comes at the expense of oxidative damage to antioxidants and spoilage of phytohormone unless you keep the cracked pollen frozen and away from light.
The Whole-cell pine pollen goes through two cycles of germination. It fends for itself to stay viable for 14 months. Essentially this yar’s bloom seeds next year’s seed and another two years of maturity to pine nut. We like to harvest for an annual quota to keep out stock fresh at all times.
Couple other interesting facts about Pine pollen and whole-cell vs cracked-cells:
Traditional use of pine pollen is with heat. Essentially in baking, added to tea, and water extraction for medicine. The heat helps release the complex sugars: Pollysacchired that are immune-stimulating. You can cook the whole-cell pollen and get the same exact profile of molecules.
But if you are a raw fan: with the whole-cell pine pollen that is properly dried and well preserved can be germinated easily. essentially you can leave a serving or two of the Canadian Pine Pollen in a full glass of water, and keep it overnight in a warm place.
